Vegetarian rice and zucchini patties

Ingredients for 1 servings:

  • 1 ½ cup(s) rice, uncooked (approx. 300 ml)
  • 1 zucchini
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 egg(s)
  • 1 tbsp breadcrumbs
  • 1 tsp broth
  • salt and pepper
  • Paprika powder
  • Oil for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

Cook the rice according to the package instructions. Cold rice from the day before also works well. Wash and grate the zucchini. Peel and finely dice the onion. Crush the garlic. Mix the rice with the zucchini, egg, onion, and garlic and season well. Add the breadcrumbs to bind and wait a while. Form the batter into about 6 meatballs and fry them in a pan with hot oil. Tastes just as good on its own as with fried potatoes, baked potatoes, or any kind of salad.
