Vegetarian skewers

Ingredients for 4 servings:

  • 2 zucchinis
  • 1 bell pepper(s), yellow
  • 225 g tofu, firm
  • 4 cherry tomatoes
  • 4 onions (pearl onions)
  • 8 mushrooms
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp liquid honey
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

for the barbecue evening

Preheat the grill. Peel the zucchini with a vegetable peeler and cut each into 8 thick slices. Wash, deseed, and eighth the bell peppers. Cut the tofu into 2.5 cm cubes. Thread the bell pepper pieces, zucchini slices, tofu cubes, tomatoes, onions, and cleaned mushrooms alternately onto 4 metal skewers. For the glaze, mix the oil, mustard, and honey and season with salt and pepper. Brush the honey glaze over the skewers and grill over medium heat for 8-10 minutes, turning regularly and brushing with the glaze. Serve the finished skewers immediately.
