Ingredients for 1 servings:

  • 120g spaghetti
  • 1 egg(s)
  • 4 garlic cloves
  • ½ roll, stale, as crumbs
  • Olive oil, plenty
  • Sea salt and pepper
  • 1 pinch of chili powder
  • e.g. Pecorino or other cheese, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

For the “Parmesan of the Poor” (parmigiano dei poveri), flatten an unpeeled garlic clove and briefly roast it, skin on, in plenty of olive oil. Add the breadcrumbs and roast for one minute until light brown. Remove the garlic. Meanwhile, cook the spaghetti until al dente. Peel and roughly chop the remaining garlic, and briefly roast it in another pan in plenty of olive oil with chili. Add a small ladleful of the pasta cooking water to prevent it from burning. Add the cooked spaghetti while still dripping wet; do not rinse! Combine the egg with the grated cheese and season with salt and pepper. Add the mixture to the pasta, add half of the breadcrumbs, and mix. Do not reheat the dish. Serve the spaghetti and sprinkle with the remaining breadcrumbs on the plate. Variation: You can also roast some anchovies with the garlic.
