Vegetarian stuffed grilled zucchini

Ingredients for 4 servings:

  • 4 zucchini
  • 6 tomatoes
  • 1 small piece(s) of feta cheese
  • olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Remove the zucchini’s insides, lightly salt them, and brush them with olive oil. Then dice the tomatoes and feta and mix. Season with salt and pepper. Fill the zucchini with the tomato and feta mixture and roast in the oven or on the grill at approximately 180 degrees Celsius for about 30 minutes. This is a great way to quickly grill vegetables.
