Ingredients for 2 servings:
- 2 bell peppers, different colors
- 125g mozzarella
- 4 cherry tomatoes
- 2 spring onions
- 1 tsp olive oil
- 3 tsp balsamic vinegar cream
- 1 tsp herbs of your choice (frozen)
- salt and pepper

Halve or quarter the peppers (so they stand upright on the baking sheet). Cut the vegetables and cheese (you can use feta cheese instead of mozzarella, for example) into small cubes, place them in a bowl, and mix with the balsamic vinegar, olive oil, herbs, salt, and pepper. Bake in a preheated oven (180°C fan/convection oven) for about 10 minutes. The peppers also make an excellent side dish, for example, with salmon fillet or stuffed turkey schnitzel.
