Vegetarian stuffed peppers

Ingredients for 4 servings:

  • 1 cup millet
  • 2 cups vegetable broth
  • 4 bell peppers, colored
  • 1 garlic clove(s)
  • 1 tomato(s)
  • 100 g mushrooms, cleaned
  • 1 ball of mozzarella
  • salt and pepper
  • 450 ml vegetable stock
  • 1 tsp honey
  • 500 g tomatoes, pureed
  • e.g. fresh basil, chopped
  • salt and pepper

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Simmer the millet in the vegetable broth for about 15 minutes, until the broth is completely absorbed. Trim the stems from the peppers and remove the seeds. Dice the garlic, tomato, mushrooms, and mozzarella, and season with salt and pepper. Mix with the millet and fill the peppers with the mixture. Heat the sauce ingredients together and cook the stuffed peppers in the sauce over medium heat.
