Drain the vegetables and knead them with the cheese and oats. This squeezes out the moisture from the peas, beans, and corn, creating a gray-green mixture. Add the finely chopped garlic and any spices you like. I always mix whatever I have on hand, such as salt, cayenne pepper, various herbs, paprika, etc. The nice thing is that this way they can taste different every time. Now shape the veggie mixture into small dumplings and add some cream cheese to the center so the balls aren’t too dry. Place them in a pan with a little olive oil or butter and fry until they’re a nice brown color. Mashed potatoes go well with them.
