Ingredients for 3 servings:
- 60 ml olive oil
- 55 g mushrooms, sliced
- 55 g onion(s), chopped
- 55 g bell pepper(s), green, diced
- 6 eggs
- 60 ml milk
- 55 g tomatoes, chopped
- 55 g Cheddar cheese, grated
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
A variety of vegetables combined with eggs – for a good start to the day.
Heat the olive oil in a pan or skillet over medium heat. Add the mushrooms, onions, and pepper and cook until the onions are translucent. Meanwhile, whisk the eggs and milk. Pour the egg mixture into the pan with the vegetables and let it set. Finally, sprinkle the cheddar cheese on top. Serve immediately.
