Vicky's Tofu Cordon Bleu

Ingredients for 2 servings:

  • 250 g tofu, squeezed out on kitchen paper
  • 1 egg(s)
  • 2 tbsp breadcrumbs
  • salt and pepper
  • Paprika powder, sweet or chop spice
  • 4 slices of Gouda
  • oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cut the firm tofu into approximately 1 cm thick slices. Halve each slice, being careful not to cut all the way through on one side! The slices can be any size; about 10 x 10 cm is good. Place a suitable slice of Gouda cheese in the center. Season the breadcrumbs generously with the spices. Coat the slices first in beaten egg, then in breadcrumbs. Fry in hot oil in a pan over medium heat. Serve warm with homemade mashed potatoes and a crisp salad.
