Vanilla waffles – the best!

Ingredients for 4 servings:

  • 4 egg yolks
  • 3 egg whites
  • 1 packet of pudding powder (vanilla flavor)
  • 500 ml milk
  • ½ lemon(s), untreated, zest
  • 150 g flour
  • Fat for the waffle iron
  • Powdered sugar for dusting
  • possibly liqueur (juniper liqueur)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

can also be baked in a pan as pancakes

Cook the vanilla pudding and let it cool slightly. Combine the egg yolks with the vanilla pudding. Stir in 1/2 lemon zest. Gradually add the flour and mix well. Beat the egg whites until stiff peaks form and fold into the batter. If desired, stir in 1 tablespoon of juniper liqueur (genever) into the batter. Preheat a waffle iron or frying pan, grease it, and bake waffles or pancakes in batches. Dust with powdered sugar before serving. Serve with hot cherries, ice cream, and whipped cream.
