Ingredients for 1 servings:
- 50 g flour
- 50 ml milk
- 1 egg yolk
- 1 egg white
- 1 tbsp butter
- 1 pinch of salt
- 1 shot of rum
- 1 shot of carbonated mineral water
- 1 tbsp brown sugar
- 1 apple
- 1 pinch(s) cinnamon powder
- n. B. Oil
- n. B. Sugar for sprinkling
- n. B. Cinnamon powder
- n. B. Hazelnuts, ground
- e.g. Apple – slices (with peel)
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Special Kaiserschmarrn with fried apple pieces and cinnamon
Put the flour in a bowl. Add the egg yolks, butter, milk, sugar, and a little cinnamon and mix well with a mixer. Then add the rum and mineral water and mix briefly again. Let the dough rest a little. Meanwhile, peel the apple, remove the core, and cut into small pieces. In another bowl, beat the egg whites until stiff peaks form. Then fold the stiff peaks into the batter. Heat a little oil in a pan. First, fry the apple pieces a little. Then add the batter, breaking it up and stirring it repeatedly to form small “crumbs.” Decorate the finished Schmarrn on the plate with sugar, cinnamon, grated hazelnuts, and apple pieces, according to taste. This dish is suitable as both a main course and a dessert. The quantities given here refer to one main course. For dessert, you can easily make smaller portions (about half the size of the main course). In general, you can use less sugar for the main course, but for dessert, it can be a little sweeter.
