Viennese-style beef salad à la Gabi

Ingredients for 4 servings:

  • 300 g beef, cooked, cut into thin slices
  • 6 potatoes, boiled, thinly sliced
  • 3 tomatoes, skinned, pitted, thinly sliced
  • 1 medium-sized onion(s), finely chopped
  • 1 tbsp capers, finely chopped
  • 2 gherkins, finely sliced
  • ½ tsp mustard
  • 3 tbsp oil
  • 1 tbsp vinegar
  • Salt
  • Black pepper, freshly ground
  • ½ bunch chives, finely chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix the beef, potatoes, tomatoes, onion, capers, and gherkins together in a bowl. Mix the mustard, oil, and vinegar into a salad dressing. Pour over the salad ingredients, fold in, season with salt and pepper, and serve sprinkled with chives.
