Ingredients for 1 servings:
- 10 g fresh yeast
- 1 portion of sourdough, approx. 75 g, e.g. from a health food store
- 150 g yogurt
- 600 ml water, lukewarm
- 1 tsp sugar
- 500 g wholemeal rye flour
- 250 g wholemeal spelt flour
- 1 tbsp salt
- 1 tbsp fennel seeds
- 1 tbsp coriander seeds
- 1 tbsp caraway seeds
- 1 tsp blue clover

Mix the yeast, sourdough, yogurt, water, and sugar thoroughly. Then add all the remaining ingredients and knead into a dough using a large spoon or a dough hook. The dough should be quite sticky. Instead of whole-wheat flour, you can also use regular flour. Cover the dough and let it rise for 1-2 hours in a warm place (25-30°C). Place a small plate on a scale and sprinkle with flour. Now, using your hands or two tablespoons, place approximately 100-130 g of dough onto the plate and then place it on a baking sheet lined with parchment paper. Since the dough is very sticky, this requires some practice. It’s best to place the dough on the sheet so that the floured side is facing up. If the dough isn’t sticky, the Vintschgerl will be too dry. Repeat this process with the remaining dough. A regular baking sheet will easily accommodate 9 portions. Usually, there are 3 leftover portions, which are placed on a second, smaller baking sheet. If you have a fan-assisted oven, place both baking trays at the same time in an oven preheated to 180°C and bake the Vintschgerl for 40 minutes. Place a baking tray with 1-2 liters of hot water on the lowest oven rack to prevent the pastries from drying out. Tip: If you have a built-in steam oven, you should use the steam function. You can of course vary the ingredients (fennel seeds, caraway seeds, coriander seeds, and savory) according to your taste, adding more or less. Anise seeds can also be added to taste. If you don’t have savory, you can use fenugreek or omit both, although this will change the flavor slightly. Savory is best ordered online. Low-fat, regular, or Greek yogurt can also be used, depending on your taste.
