Ingredients for 4 servings:
- 1.2 kg potatoes, purple
- 1 ½ tsp, leveled salt
- ½ tsp nutmeg, freshly grated
- 2 eggs
- 150 g potato flour
Instructions
Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes
Boil the potatoes with their skins on, then peel and press them through a ricer. Add the remaining ingredients one at a time and knead into a smooth dough. Then roll into dumplings, each weighing about 80 grams. Simmer in simmering (but not boiling) salted water for about 20 minutes, until the dumplings float to the top. They taste even better than regular potato dumplings and look fun.
