Waffle with Pineapple (Mario Basler)

Ingredients
 

Waffle dough:

  • 125 g Butter
  • 75 g Sugar
  • 0,5 tsp Vanilla paste
  • 1 pinch Salt
  • 3 Pc. Eggs
  • 250 g Flour
  • 2 tsp Baking powder
  • 200 ml Milk
  • 1 shot Strohrum

Sauce:

  • 4 tbsp Creme fraiche Cheese
  • 100 ml Maple syrup
  • 0,5 tsp Vanilla paste
  • 1 tsp Fermented pepper
  • 1 tsp Pink pepper

Pineapple:

  • 0,25 Pc. Pineapple
  • 200 ml Pineapple puree
  • 1 shot Strohrum
  • 3 Stalk Coriander
  • 2 Pinches Pink pepper

Instructions
 

  • Mix together the soft butter, sugar, salt and vanilla paste. Then add the eggs and beat well. Stir in the baking powder and flour, and finally the milk. Finalize with Strohrum.
  • Whip the crème fraîche with some of the maple syrup and vanilla paste
  • Flavor the pineapple puree with a dash of straw. Peel the pineapple, cut into pieces and add to the sauce. Chop the coriander, leaving the tips of the coriander sprigs for decoration. Add fermented pepper, pink pepper and chopped coriander to the sauce and season to taste.
  • Place a waffle in the middle of the plates, place the pineapple pieces around them and drizzle with the sauce. Place a dump of vanilla cream on top and decorate with a little coriander.
