Waffles with a delicate cinnamon flavor

Ingredients for 1 servings:

  • 50 g butter, melted
  • 2 large eggs, separated
  • 2 tsp vanilla extract
  • 150 ml buttermilk
  • 140 g flour
  • 2 tsp, leveled baking powder
  • 1 pinch of salt
  • ½ tbsp sugar
  • 1 tsp ground cinnamon
  • 60 ml mineral water (sparkling)
  • Powdered sugar, for dusting

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Briefly melt the butter in the microwave and separate the eggs. Whisk the egg whites until stiff peaks form and set aside. Combine the egg yolks with the vanilla extract, butter, and buttermilk. Briefly stir in the flour, baking powder, salt, sugar, and cinnamon with the mineral water. Add the egg whites and fold in with a spatula. Heat a waffle iron and bake the batter in batches until all the batter is used up. The waffles taste best fresh and dusted with powdered sugar. I made six large waffles with the batter.
