Ingredients for 10 servings:
- 150 g butter, soft
- 3 tbsp sugar
- 1 packet of vanilla sugar
- 3 eggs, size M
- 250 ml milk
- 200 g flour
- 1 pinch of baking powder
- 1 pinch of salt
- 1 jar cherry(s)
- 2 tbsp sugar
- 2 cl cherry brandy or liqueur
- 1 tbsp cornstarch or vanilla pudding powder
- Oil for the waffle iron
- Powdered sugar for dusting
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Cream together the butter, sugar, and vanilla sugar in a mixing bowl. Gradually add the eggs. Now add the flour, baking powder, a pinch of salt, and the milk, and mix everything into a smooth batter. Preheat the waffle iron, brush with a little oil, and bake the waffles until golden brown. Drain the cherries in a sieve and collect the juice. Caramelize the sugar in a saucepan and deglaze with the kirsch (if you don’t want to use alcohol, simply omit it) and the cherry juice from the jar. Reserve a few tablespoons of the juice to stir the cornstarch until smooth. Allow the cherry juice to reduce slightly, then add the cherries. Thicken the boiling cherries with the smooth cornstarch until they reach the desired consistency. To serve: Arrange the baked waffles on a plate, dust with powdered sugar, and serve the hot cherries on or next to the waffles. If you like it a little sweeter, top with some whipped cream!
