Ingredients for 4 servings:
- 250 g minced meat
- 1 pack of bacon, e.g. bacon
- 200 g mushrooms
- ½ bunch parsley
- 2 large eggs
- 250 g quark
- 100 g cheese, in one piece, Gouda or Emmental
- 1 large onion(s)
- herbal salt
- pepper
- Paprika powder
- 1 tbsp mustard
- 1 tbsp tomato paste
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 15 minutes
Preheat oven to 200°C fan/convection oven. Wash and chop the mushrooms, then lightly fry them in a pan with the parsley. Chop the onions and place them in a bowl along with the minced meat, eggs, quark, tomato paste, and mustard; mix well. Season with salt, pepper, and paprika. Brush a loaf pan with oil and line with bacon. Spread 1/3 of the minced meat mixture into it. Use a spoon to make a long well in the center. Add the mushrooms and parsley to this well, season with salt and pepper, and cover with the remaining minced meat. Place the pan in the oven for 20 minutes. Then remove from the oven, top with cheese, and then cover with aluminum foil to prevent the cheese from blackening. Bake in the oven for another 30 minutes. Once the cooking time is over, turn the pan out onto a large plate and garnish the meatloaf with side dishes. Tip: Other fillings are also possible, e.g. coleslaw filling.
