- 1 kg potato(s), floury
- 1 egg(s)
- 250 g potato flour
- 1 tbsp oil
- 2 tsp salt

The Waldviertel is a region in eastern Austria
Boil the potatoes in their skins, peel while still hot, and immediately mash them with a potato ricer. Mix all ingredients together and form dumplings as desired. Place in boiling salted water and simmer for 10 minutes. A wonderful side dish for roasted meat and poultry.
