Waldviertler poppy seed noodles

Ingredients for 4 servings:

  • 500 g potato(s), floury, cooked the day before,
  • 150 g flour (wheat flour)
  • 30 g butter
  • 1 egg(s)
  • 200 g poppy seeds (Waldviertel grey poppy seeds)
  • rum
  • vanilla sugar
  • powdered sugar

Working time approx. 40 minutes; Total time approx. 40 minutes

Original Waldviertel recipe

The floury potatoes, cooked the day before, are finely mashed and kneaded into a dough with wheat flour, butter, a pinch of salt, and one egg. Form the noodles and let them simmer for about 10 minutes. Drain the noodles, toss them in melted butter, sugar, a little vanilla sugar, and a dash of rum. Mix in enough grated Waldviertel poppy seeds and serve sprinkled with powdered sugar. The Waldviertel region is located in northwest Lower Austria on the border with the Czech Republic.
