Quark Kaiserschmarrn

Ingredients for 3 servings:

  • 500 g quark (cottage cheese)
  • 5 eggs
  • 3 tbsp sour cream
  • 100 g flour
  • Raisins
  • 1 pinch of salt
  • Sugar
  • 1 tbsp vanilla sugar
  • lemon(s)
  • Butter or lard for frying
  • powdered sugar
  • Cinnamon

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Separate the egg whites from the yolks, beat until stiff peaks form, and chill. In a second bowl, combine the curd cheese, egg yolks, sour cream, sugar (to taste), vanilla sugar, and the grated zest of one lemon, then add the flour and raisins to taste. Carefully fold in the beaten egg whites. Heat the butter or lard in a pan, add a ladleful of batter to the pan, and let it brown golden brown on both sides. Tear the finished pancakes into pieces, place them in a baking dish with knobs of butter, and keep warm in the oven. Continue in the same way with the remaining batter. Finally, carefully mix the Schmarrn again in the baking dish and serve sprinkled with powdered sugar and cinnamon. Homemade applesauce or fruit salad goes best with it. This also works with fewer eggs (I usually use 3).
