Walnut-Apple Bundt Cake

Ingredients for 1 servings:

  • 250 g spelt flour type 1050
  • 250 g walnuts, ground
  • 180 g raw cane sugar
  • 1 pack of cream of tartar baking powder
  • 1 tsp cinnamon powder
  • 1 m.-large banana(s), very ripe
  • 300 g soy yoghurt (yoghurt alternative) (soy yoghurt)
  • 50 ml soy milk (soy drink) (soy rice drink)
  • 350 g apples
  • Fat and flour for the mold
  • n. B. Powdered sugar for sprinkling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 25 minutes

Mix all dry ingredients in a bowl. Add the soy sauce, plant-based milk, and the well-mashed banana. Beat everything with a hand mixer on high speed until creamy. Peel, core, and dice the apples, then fold them into the batter with a spoon. Pour the batter into a greased and floured bundt pan and smooth it out. Bake in a preheated oven on the middle rack at 180°C (top and bottom heat) for about 70 minutes. Turn the cake out onto a wire rack, let it cool, and sprinkle with powdered sugar.
