Ingredients for 1 servings:
- 1 pack of yeast
- 1 tbsp honey
- 500 g flour (spelt flour, type 630)
- 1 tbsp sea salt
- 150 g walnuts
- 1 carrot(s)
- 100 g feta cheese
- Thyme, fresh
Instructions

Mix 150 ml of lukewarm water with the yeast and honey, cover, and let stand until bubbles form. Mix the flour with the salt, roughly chop the walnuts, finely grate the carrot, and gradually knead everything into an elastic dough. Dust with flour, cover, and let rise in a warm place for 30-45 minutes. Knead the dough again, then knead in the crumbled feta and thyme leaves (if desired). Let rise for another 30 minutes. Form 15 rolls from the dough and place them in a circle (wheel shape) on a baking sheet lined with baking paper, slightly touching. Bake in a preheated oven at 180°C for approx. 40-50 minutes.
