Walnut cookies

Ingredients for 1 servings:

  • 250 g butter
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch(s) salt
  • 4 eggs
  • 300 g walnuts, ground
  • 250 g flour
  • 3 tsp, leveled baking powder
  • 250 g powdered sugar
  • 2 tsp instant coffee powder
  • 3 tbsp brandy
  • 2 tbsp water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 17 minutes; Total time approx. 47 minutes

Cream the butter until fluffy. Stir in the sugar, salt, vanilla sugar, and eggs. Add the ground walnuts and mix in. Gradually add the flour mixed with the baking powder and mix well. Spread the finished dough onto a baking sheet lined with baking paper. Bake in an oven preheated to 200°C (top/bottom heat) or 180°C (fan oven) for about 17 minutes on the middle rack. In the meantime, mix the glaze. It should be easy to spread but not too runny! After baking, let the dough cool. Then spread the glaze over the entire surface in one go and immediately cut into pieces before the glaze starts to crack! Note: for a larger baking sheet, add 20% to the specified quantities. Store the cookies in a cool place and, ideally, avoid stacking them on top of each other in the tin, as otherwise they may stick together.
