Walnut cottage cheese

Ingredients for 2 servings:

  • 200 g cottage cheese (unsalted)
  • 1 tsp oil (linseed oil)
  • 10 walnuts, peeled halves

Instructions

Working time approx. 5 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 5 minutes

Chop the walnut halves in a food processor, not quite finely, but not too coarsely either. Stir them into the cottage cheese. Next, mix in the linseed oil and let the whole thing sit in the fridge overnight to allow the walnut flavor to infuse. The number of nuts can be adjusted to your liking, but be careful, too many will make the cottage cheese bitter. It also works with other types of nuts. Linseed oil is certainly a matter of taste, but I like the color it gives, and it’s healthy. Any kind of fresh bread, white or whole wheat, goes well with this.
