Ingredients for 60 servings:

  • 3 eggs, of which the egg white
  • 1 pinch of salt
  • 1 tbsp water, cold
  • 150 g powdered sugar
  • 1 bottle of butter-vanilla flavoring
  • 300 g walnuts, cut into larger pieces
  • 2 packs of wafers
  • Water, boiling

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Whisk the egg whites with the water and salt until stiff peaks form. Add the icing sugar and flavoring and stir over the boiling water (taken off the heat) until the mixture is glossy. Carefully fold in the walnuts. Use a teaspoon to place small heaps onto the wafers and bake in a preheated oven at 140°C for about 20 minutes. It’s better to make them lighter than too dark. Tip: Once cooled, store them in tightly sealed containers, otherwise they will become hard and dry. They look particularly beautiful if you cover them with chocolate coating or place half a nut on top.
