Ingredients for 80 servings:

  • 3 eggs, including the egg white
  • 210 g powdered sugar
  • 140 g dates
  • 70 g walnuts
  • 70 g candied lemon peel, diced
  • 1 pack of wafers, round

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Finely slice the dates, chop the nuts and candied lemon peel. Whisk the egg whites and icing sugar over steam until thick and foamy. Remove from the heat, add the dates, nuts, and candied lemon peel, and mix. Place the biscuits on the wafers. Bake at 150°C for about 15 minutes. Tip: Sprinkle with finely chopped candied lemon peel.
