Walnut shortbread cookies

Ingredients for 1 servings:

  • 200 g butter
  • 100 g powdered sugar
  • 1 medium egg yolk
  • 1 pinch of salt
  • some vanilla sugar
  • 100 g walnuts, coarsely chopped
  • 300 g flour

Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours

very old recipe from my mother

Mix the butter, icing sugar, and egg yolks until smooth, then season with a pinch of salt and some vanilla sugar. Stir in the roughly chopped walnuts and flour, and immediately shape the dough into rolls (about 3-4cm in diameter). Shape the rolls into squares using a flat object, such as a board, and leave to cool thoroughly in the refrigerator (1-2 hours). Then cut into thin slices and bake them on a baking tray lined with baking paper at 150°C (300°F) for 9 minutes. The baking time and temperature vary from oven to oven. The cookies should still be very light in color. Decorate with chocolate coating, if desired.
