Ingredients for 4 servings:
- 1 pack of lamb’s lettuce, washed
- 250 g pasta (spaghetti or spirali)
- 2 tbsp feta cheese
- 3 m.-large tomato(s)
- 1 tbsp pesto
- 3 tbsp pine nuts
- 3 tbsp olive oil
- some balsamic vinegar
- salt and pepper
- possibly salmon fillet(s)

Wash the lamb’s lettuce and place it in a large bowl. Dice the tomatoes and add them to the lamb’s lettuce along with the feta, olive oil, pesto, and balsamic vinegar, and toss to combine. In the meantime, cook the pasta until tender and toast the pine nuts in a dry pan. While the pasta and pine nuts are still warm, pour them over the prepared salad and toss to combine thoroughly. Season with salt and pepper to taste. A tasty little variation: add seared, chopped salmon fillets!
