Warm pasta and asparagus salad

Ingredients for 2 servings:

  • 300g penne
  • salt water
  • 1 bunch of green asparagus
  • 4 tomatoes
  • 100g mozzarella
  • 5 stalks parsley, flat
  • 1 tsp sugar
  • 8 tbsp olive oil
  • 3 tbsp lemon juice
  • 2 tbsp vinegar
  • salt and pepper
  • some honey, if necessary

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the penne in salted water according to the package instructions. Peel the lower third of the asparagus and cut into 4 cm pieces. Cook in a pan with a little oil over low heat until al dente. Meanwhile, add the sugar, 1 tablespoon of lemon juice, and salt, stirring frequently. Meanwhile, dice the tomatoes and mozzarella. Chop the parsley. Make a fruity vinaigrette with olive oil, vinegar, the remaining lemon juice, salt, pepper, and perhaps a little honey. The quantities given here are only approximate; adjust according to taste. Mix the penne, asparagus, tomatoes, mozzarella, parsley, and vinaigrette. Serve warm.
