Warm tomato and cheese sandwich

Ingredients for 1 servings:

  • 1 roll (ciabatta)
  • 2 tomatoes
  • 2 tbsp Parmesan, finely grated
  • 1 tbsp balsamic vinegar
  • 2 tbsp cream cheese
  • 2 tsp green pesto
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 160°C fan/convection oven. Bake the roll in the oven until crispy. Wash, slice, and salt the tomatoes, then drain them in a colander. This will prevent the roll from getting soggy. Mix together the cream cheese and pesto. Mix the Parmesan cheese with the balsamic vinegar. Remove the roll from the oven and cut open. Spread one side with the cream cheese and the other with the Parmesan mixture. Fill the halves with the tomatoes, season with pepper, and enjoy while still warm.
