Warm, wintery fruit salad with mascarpone cream

Ingredients for 4 servings:

  • 250 g mascarpone
  • 16 g vanilla sugar
  • 100 ml cream
  • 1 organic orange(s), zest
  • 2 bulb(s)
  • 2 apples
  • 2 persimmons
  • 30 g butter
  • 2 tsp cinnamon
  • 2 pinches of cardamom
  • 2 tsp vanilla paste
  • 2 tsp cinnamon for dusting

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Whip the mascarpone, vanilla sugar, cream, and orange zest until creamy and firm. Refrigerate the cream. Peel and dice the pears, apples, and persimmons. Melt the butter in a pan. Mix the cinnamon, cardamom, and vanilla paste with the butter. Add the apples and pears to the pan and cook over medium heat. Finally, add the persimmons and continue cooking until softened but still firm to the bite. Ladle the warm fruit salad into glasses. Spread the cream on top and dust with cinnamon.
