Ingredients for 4 servings:

  • 500 g ham
  • 4 eggs
  • 1 cup cream
  • 1 bunch of parsley
  • 1 bunch lemon balm
  • 1 bunch of chervil
  • Pepper, from the mill
  • 1 pinch of nutmeg
  • 1 tbsp mustard
  • 2 egg whites
  • 2 tbsp butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

with white wine & baguette – typically Westphalian

Pass the ham through the fine disk of a meat grinder twice. Blend 400g of ham with the eggs, chopped herbs, and cream until smooth. Season with salt, pepper, and nutmeg. Pour into greased baking dishes. Beat the egg whites until stiff, fold in the remaining ham, and place in the dishes. Bake in the oven (preheated to 220°C) for 15 minutes. Serve with baguette, leaf salad, and a dry white wine!
