Horseradish is an extremely healthy food. It is rich in vitamin C, iron, zinc, and potassium and also contains a lot of fiber and vitamins B1 and B2. The root also contains essential oils. According to the German Society for Nutrition (DGE), these mustard oils have a potent antibacterial effect and can protect against viruses and bacteria. They may also have a positive impact on the immune system and reduce the risk of certain types of cancer. Because of its healthy properties, horseradish has been known and valued as a spice and medicinal plant for centuries. The root is very versatile in the kitchen: it goes well with meat (especially beef) or fish, for example, trout or salmon. Horseradish is also very popular as a seasoning in various sauces.
You can buy horseradish as a fresh root that can be grated or sliced and eaten raw. In this form, the root vegetable is particularly healthy. However, you can also get horseradish in good quality as cream in a jar: for example as table horseradish or a little less spicy as creamed horseradish. However, when processed, horseradish contains lower levels of its healthy ingredients and provides more calories.
It is best to buy fresh horseradish as a whole root so that it does not dry out and has a longer shelf life. It can be stored in the vegetable compartment of the refrigerator for about 4 to 6 weeks. You should process the radish during this time to benefit from its healthy properties. Alternatively, you can peel it and freeze it airtight. Incidentally, wasabi is often referred to as “Japanese horseradish”. He has similar characteristics and is accordingly also very healthy.
