- Another option is to grate the root. Mix in some lemon juice and freeze the grated horseradish.
- Horseradish will keep frozen for at least 6 months. However, it loses a little flavor.
- You can also preserve horseradish with vinegar.
- Grate the root finely and then add a dash of vinegar and half a teaspoon of salt.
- Pour this mixture into a small sterilized screw-top jar.
- Make sure the horseradish is completely covered with vinegar or it will turn brown.
- Screw the jar tightly on and then store it in the fridge for up to 3 weeks.
- If you have a basement or garden, you can also bury the root in moist sand. It will keep like this for at least 8 weeks.
