What Exactly is Soda Water?

In Germany, the term “soda water” refers to sparkling water that contains at least 570 mg/l sodium bicarbonate. It is therefore made from table or tap water with the addition of carbonic acid and sodium bicarbonate. In contrast to mineral water, the specifications for soda water are not strictly regulated, except for the addition of carbonic acid and at least 570 mg/l sodium bicarbonate. In order to earn the designation of mineral water, the drink must meet specified requirements: it must flow through different layers of rock, which enrich it with minerals and trace elements, and may only be bottled directly at the source. Changes in the ground state are again hardly allowed. Only carbon dioxide, iron, and sulfur may be added or removed. These specifications distinguish soda water and mineral water.

What is soda water for cocktails?

Its relatively high proportion of sodium bicarbonate makes soda water ideal for mojitos and other cocktails. It is characterized by a slightly soapy taste, from which the aroma of the drink benefits. Since demand is relatively low, however, fewer and fewer retailers are offering soda water. Accordingly, many bartenders use mineral water for their cocktails. Especially since there are variants that contain more sodium. Bottled water is also theoretically an option. In contrast to mineral water, it has been changed (e.g. minerals or carbon dioxide have been added or removed) and has thus moved further away from its original state than the mineral water and table water ordinance would allow.
