What Is Mechanically Separated Meat?

Mechanically separated meat is a product obtained by mechanically removing the meat adhering to meat-bearing bones after boning. The structure of the muscle fibers is changed or dissolved. There are different methods of production.

In the case of cattle bones, this process is banned throughout Europe, and mechanically separated meat from the spine and skulls of goats and sheep may not be processed.

Mechanically separated meat is mainly used in the production of heat-treated meat products. However, the use must be clearly declared in the list of ingredients.

The German guidelines for meat and meat products state that no mechanically separated meat may be used in products that are manufactured to the highest quality. Most commercial meat products fall under this category.
