Ingredients for 1 servings:

  • 60 g wheat flour, type 550, 812 or 1050
  • 20 g sugar
  • 20 ml buttermilk
  • 100 ml milk, 3.5%

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Put the flour and sugar in a bowl with a lid and beat with the milk and buttermilk until smooth. Now let this starter stand in the kitchen until the dough begins to ferment, i.e., bubble. Depending on the temperature, this will take 1-2 days. After that, you can store the dough in a closed container in the refrigerator and feed it as described below in the Robert letter. This wheat sourdough can also be made and fed with type 812 wheat flour. Robert letter: For a starter Robert for baking bread: I am Robert, Hermann’s brother, who is responsible for the cake. I am your new family member for 10 days or longer. If you treat me carefully and feed me regularly, I will give you two children. Please keep me only in glass or plastic bowls. I absolutely do not like metal. Originally, I did not want a refrigerator either, but my new mother put me out of the habit. Day 1: You don’t need to take care of me today; we need to get used to each other first! Days 2-4: On these days, I’d like some exercise. Please stir me once a day with a wooden spoon. Day 5: Today I’m very hungry, so I’m feeding myself: 100g wheat flour type 550 or 812, depending on the batch, 200ml milk (3.5%), and 20g sugar (if the bowl isn’t big enough, (2.5l capacity) transfer Robert to a larger bowl so I can’t make my own mess). Days 6-9: A walk to aid digestion, which means stirring daily again. Day 10: Feed me again: 100g wheat flour type 550 or 812, depending on the batch, 200ml milk, and 20g sugar. After feeding Robert again, you can divide him into 4 portions or use him according to the recipe. But first always set aside 200g for a new batch, to feed, so you can bake bread again in 10 days. According to old custom, you give a portion – 200g – to a friend with the Robert letter. You can now use the other parts to try out delicious recipes; you’ll find that your breads become even lighter and softer. If you don’t feel like baking bread right now and “Robert” is ready in the fridge, there’s also a cake recipe. Note: “Robert” isn’t that sensitive! He won’t mind if you can’t bake on the 10th day. Stirring is important, and then he’ll keep until the next day or the day after. Need more sourdough starter? Simply feed him 1.5 times the amount.
