Ingredients for 4 servings:

  • 2 cans of white beans with vegetables
  • 1 kg potatoes, floury
  • 1 kg pork knuckle(s) or pork belly
  • 500 g smoked bacon
  • 1 ½ tbsp savory, freeze-dried
  • 2 m.-sized onion(s)
  • 2 bay leaves
  • 10 juniper berries

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 3 hours

Place the meat in a large pot of cold water and add the bay leaves and juniper berries. Simmer for 1.5 to 2 hours. Meanwhile, peel the potatoes, cut them into 1×1 cm pieces, and rinse them. Remove the meat from the pot, add the beans, potatoes, and savory, and simmer for about 25 to 30 minutes. Once the meat has cooled slightly, cut it into bite-sized pieces and return it to the pot. Season to taste with clear stock or salt and pepper. If you want the stew to be a little creamier, you can mash some of the potatoes and beans and add them back in.
