East Frisian chopped beans – Insett beans

Ingredients for 3 servings:

  • 500 g sour beans (ready-made product)
  • 1 liter of water
  • 3 sausages, coarse
  • 1.2 kg potatoes
  • 1 bay leaf
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour; Total time approx. 13 hours 15 minutes

Drain the beans the day before and cover with fresh water in a bowl. Let stand until the next day. Drain the water the next day. Boil the beans with 500 ml of fresh water, then drain and boil again with 500 ml water. Place the coarse sausages on top of the beans and simmer for about 1 hour. Meanwhile, peel the potatoes and boil them with a bay leaf and salt until boiling. When everything is tender, drain the potatoes and let them steam off. Drain the beans, reserving the water. Add the potatoes, season with salt and pepper, and mash everything. Add the reserved liquid, if desired. Plate up and serve.
