Ingredients for 40 servings:

  • 350 g sugar
  • 30 g butter
  • 1 pinch of salt
  • 125 ml condensed milk
  • 1 piece(s) vanilla pod(s)
  • 300 g chopped white chocolate
  • 100 g pistachios, chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Place the sugar, butter, salt, and condensed milk in a saucepan. Scrape out the seeds from the vanilla pod and add them along with the pod. Bring the mixture to a boil over medium heat and simmer for about 5 minutes, stirring constantly. Remove the pan from the heat, remove the vanilla pod, and stir in the chopped chocolate until completely melted. Add the pistachios, stir again, and pour into a buttered, square dish (about 18 cm sides). Refrigerate for one to two hours. When the caramel has set, cut into squares. The caramel is very sweet and will keep in the refrigerator for up to a week.
