Ingredients for 1 servings:

  • 100 g butter
  • 85 g powdered sugar
  • 1 vanilla pod(s), slit open and pulp scraped out
  • 100 g flour
  • 1 tsp baking powder
  • 30 g cornstarch
  • 4 tbsp oat flakes
  • 50 g white chocolate, coarsely chopped
  • 50 g cranberries

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

For 14 cookies with white chocolate and cranberries

Beat the butter with powdered sugar until light and creamy. Add the vanilla seeds. Combine the flour, baking powder, cornstarch, and oats and add to the butter mixture. Fold in the chocolate and cranberries. Shape the dough into a log, wrap in cling film, and refrigerate for 1 hour. Preheat the oven to 180 degrees Celsius. Cut the log into 1 cm thick slices and place them on a baking sheet lined with baking paper. Bake for 12-15 minutes.
