Ingredients for 2 servings:
- 2 m.-sized eggs
- 4 tbsp flour
- 1 pinch of salt
- 2 tbsp sugar
- 1 tsp, leveled baking powder
- 150 ml milk
- 250 g currants, white
- some butter
- possibly sugar for sprinkling
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Pick currants, if desired, strip them from the stems, wash them, and dry them on kitchen paper. Beat the eggs with a pinch of salt and the sugar until frothy. Add the flour, baking powder, and milk and mix everything into a semi-liquid batter. Stir in the white currants. Heat a pan with a knob of butter. Pour in half of the batter and bake until golden brown on each side. Repeat with the remaining batter. Plate up and serve. Sprinkle with sugar, if desired.
