Ingredients for 1 servings:

  • 190 g wheat flour type 405 (in Austria type 480)
  • 65 g sugar, fine
  • 1 packet of vanilla sugar
  • 40 g walnuts, ground
  • 40 g hazelnuts, ground
  • 1 pinch of salt
  • 120 g butter
  • 1 egg(s)
  • 1 tbsp cream
  • powdered sugar
  • 80 g powdered sugar
  • 1 tsp lemon juice
  • 1 small egg white

Instructions

Working time approx. 50 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 42 minutes

Nutty Easter cookies (approx. 45 pieces)

Mix together the flour, sugar, vanilla sugar, nuts, and salt. Add the flaked butter and crumble it into small pieces, then add the eggs and cream. Quickly knead everything into a smooth dough. Wrap the dough in cling film and let it rest in the refrigerator for at least 40 minutes. Preheat the oven to 180°C (top and bottom heat). Roll out the dough to a thickness of 3-4 mm and cut out bunnies. Place these on a baking sheet lined with baking paper and bake for about 12 minutes until light brown. Then let cool on a wire rack and sprinkle with caster or powdered sugar. A more effective glaze is the sugar glaze: Mix the powdered sugar with 1 teaspoon of lemon juice and egg white until creamy and spread over the cookies. Makes about 45 cookies.
