The name derives from the silvery-white and delicate down of the leaf buds that are picked for white tea. The fine tea is made by hand: after picking, the leaf buds are left to wither and air dry in daylight. The white downy hairs remain. In addition, the oxygen can hardly react with the cell juice because the cell walls remain virtually undamaged due to the gentle treatment. The fermentation hardly takes place.
Origin
White tea is native to the Chinese province of Fujian. Today, very good qualities also come from Darjeeling and Sri Lanka.
