Ingredients for 1 servings:
- 75 g oat flakes
- 2 eggs
- 125 ml milk
- 1 tsp, leveled Himalayan salt
- 1 bell pepper(s)
- 1 onion(s)
- 1 can of medium mushrooms
- 1 garlic clove(s)
- 1 pepper, red
- 1 ½ tsp heaped oregano
- 1 pack of feta cheese
- 8 olives (Kalamata olives), pitted
- 2 tbsp rapeseed oil

Using a food processor, grind the oats into whole-grain oat flour and place in a bowl. Add the beaten eggs and milk. Season with a level teaspoon of Himalayan salt. Peel the garlic clove, wash the bell pepper, remove the stem, and cut the flesh into rings. Place both in a food processor and finely chop. Then add the bell pepper and garlic mixture to the batter and stir until the batter is smooth. Heat the oil in a 28 cm frying pan. Pour the batter into the pan. Wash the bell pepper and cut into strips, peel the onion, halve it, and cut into strips. Place the mushrooms in a colander and let drain. Cut the feta cheese into 8 strips. Place everything on the oat dough and sprinkle with oregano. When the edges of the pan pizza are light brown, place the pan on the top rack of an oven preheated to 220°C and bake for about 10 minutes. Slide the oat pan pizza onto a plate and garnish with olives and oregano.
