Whole grain oil cake with maple syrup

Ingredients for 1 servings:

  • 200 g flour (wholemeal)
  • 200 ml oil
  • 300 ml maple syrup
  • 5 eggs
  • 1 packet of baking powder
  • 1 pinch of salt
  • some water
  • 1 shot of rum
  • n. B. Fruit, e.g. apples, pears, plums, cherries
  • e.g. cinnamon, nuts, almond flakes, for sprinkling

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cake – basic recipe without sugar

Separate the eggs and beat the egg whites until stiff (adding a pinch of salt if desired). Beat the egg yolks until fluffy, then gradually add the oil, maple syrup, and rum. Fold in the wholemeal flour and baking powder; if necessary, thin with a little water if the batter is too stiff. Carefully fold in the beaten egg whites and pour into a cake tin or baking sheet. Top with fruit, which will automatically sink into the batter during baking. Sprinkle with cinnamon, nuts, or flaked almonds, if desired. Bake for about 50 minutes at 180°C. The cake is wonderfully fluffy, quick to prepare, and always turns out well. My favorite combination is apples (about 5, peeled and sliced) and some cherries from a jar. The sky’s the limit.
