Whole roasted salmon trout

Ingredients for 2 servings:

  • 1 large salmon trout(s), approx. 1 kg
  • 1 lemon(s), preferably untreated
  • 1 sprig(s) of thyme, fresh or dried
  • 1 stalk tarragon, fresh or dried
  • salt and pepper
  • Butter for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

with herbs

Wash the salmon trout thoroughly inside and out, then pat dry. Halve the lemon and slice it. Season the trout inside and out with salt and pepper, then place the lemon slices and herbs into the belly of the trout. Heat the butter in a pan and fry the trout for about 7 minutes on each side. Then turn off the heat and let the salmon trout rest for a while. We serve it with boiled potatoes and a cucumber salad.
