Whole-wheat scones with orange peel and raisins

Ingredients for 1 servings:

  • 360 g wheat flour (wholemeal)
  • 115 g brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 230 g butter, cold, diced.
  • 150 g oat flakes, wholemeal
  • 200 g raisins
  • 240 ml buttermilk
  • 1 large orange(s), zest
  • Milk, for brushing
  • Sugar, for sprinkling

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Preheat the oven to 180°C (350°F). Combine the flour, sugar, baking powder, and baking soda. Knead with the cubed butter. Then add the zest, oats, raisins, and buttermilk. Knead by hand. Do not over-knead to preserve the oats and raisins. Roll out the dough, not too thin, and cut out 8 to 12 round scones. Brush with milk and sprinkle with sugar. Place the scones on a baking sheet lined with parchment paper and bake for 12 minutes, until golden brown. Serve warm with whipped cream, butter, or plain butter.
