Ingredients for 1 servings:
- 200 g whole wheat flour
- 300 g wholemeal spelt flour
- 50 g flaxseed
- 50 g pumpkin seeds
- 50 g seeds, mixed, according to your choice and taste
- 1 cube of fresh yeast
- 1 tbsp Crema di Balsamic vinegar
- 1 tbsp apple cider vinegar
- 2 tsp, heaped salt
- 500 ml water
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 15 minutes
perfect in just 60 – 70 minutes
Combine all ingredients one at a time in a mixing bowl and mix with a hand mixer or a food processor until you have a dough. The dough will be very runny when cooked, so don’t be surprised. Line a loaf pan with baking paper and pour in the mixture. Dust the surface with flour. Place the pan on the middle rack of a cold (!) oven and set the heat to 200°C (top/bottom heat). After 30 minutes, remove the semi-finished bread from the pan, remove the baking paper, and bake the bread on the middle rack for another 30-40 minutes. Check if it’s overbrowning. Remove from the oven and let it cool on the rack. The finished bread will be fresh and crispy, and moist on the inside—the perfect bread without having to wait hours for the dough to rise. Tip: I always freeze fresh yeast and let it thaw before using it. I’ve had very good experiences with this and find that it can have a stronger effect.
